Cuvee de Brasseur #2 - Kriek Version
The time has finally come, this beer is over a year in the making. Cuvee de Brassuer is an ongoing wild ale/funky barrel project that we've been toying around with. Batch #1 of this beer was put into bottles as both a raw wild ale and also as a raspberry version(framboise). This time around I decided to completely drain the barrel and referment with 3 pounds of dark sour cherries. The resulting beer is very tart and acidic with flavors of oak, wine tannins, cherries and just general funkiness that happens as a barrel is exposed to the environment around it.
The first two batches of this beer are a blend of 4 different beers over the past year and a half including.....PineApple Express, Red Ryder, Bashore BrewHaus Belgian Red and FiddleStix Lemon Grass Wheat Beer. All these beers were blended together and aged with wild bacteria and yeast to create a sour, acidic and funky flavor!! Because I do not know how much of each beer is in this blend I have no idea what the ABV of this beer is.....somewhere between 5 and 10 percent.
This beer may not be for everyone, but I am personally very proud of the way it turned out and it was truely a labor of patience and spontaneous fermentation. It is also very exciting to us to think that in a little less than a month both Cuvee de Brasseur and PineApple Express #2 will be on tap......two sour ales......one small basement brewhaus!!
